Growing Conditions

he 2019 vintage was a warm dry vintage with normal yields and somewhat later ripening than 2018 allowing for full physiological ripeness. All grapes are Salmon Safe certified as is the wine.

Harvest

Four different Sauvignon Blanc clones were hand-harvested and sorted.

Winemaking

After being whole cluster pressed, the juice was settled, chilled, and cold fermented in stainless steel. Tis wine did not go through malolactic fermentation.

Aging

After primary fermentation, the wine was aged in neutral Sirugue French oak for additional complexity and roundness.

Appearance

This wine is light straw in color and absolutely brilliant.

Food Pairing

Fish tacos or grape wood smoked salmon with lettuce sauce.
