This wine is dark red in color with enticing aromas of Christmas fruit cake, and notes of graham.
An elegant but firm mouth feel begins with plum, herbs, and a slight olive character that finishes with baking spice and graphite/pencil. The smooth tannins and oak integrate beautifully with generous fruit.

Clone 4, clone 6, and clone 8 Cabernet Sauvignon, and clone 400 of Petit Verdot were thinned to ensure even ripening. The crop yields ranged from 1.5 tons to 2.4 tons per acre.

This wine was fermented in 2000 liter stainless steel tanks and gently punched down twice a day.
After pressing and settling, this wine went directly to French chateau barrels for additional aging and maturation.
Pair with mac and cheese with Brussels sprouts or a cheese course with Beechers and Humbolt Fog.
