During the 10-20 day fermentation, each tank is tasted daily until the Winemaker decides it is time to press using wooden cage basket presses.
This 100% Cabernet Franc comes entirely from the old blocks of Cabernet Franc planted in 1995 and 2001. It has a solid structure but the tannins are high quality and seamless.
This vintage is similar to 2010 with excellent flavor development and relatively low brix in the fruit.
The rose has fresh citrus aromas with hint of dry herbs, followed by great flavors or candied clementine and orange peel. It is wonderful as an aperitif and also pairs nicely with light dishes.
