The 2018 vintage at Spring Valley was extremely compressed over a 4 week period. The winter was somewhat warm compared to 2017. Spring was very wet and summer was very hot and dry contributing to low yields. Occasional fires in surrounding areas filter the sunlight and delayed Harvest. The first pick was on September 5 and the last pick was on October 8.
Spring Valley Vineyard fruit is hand-picked, hand-sorted, and gently de-stemmed by gravity. In keeping with Spring Valley tradition, hand punch-downs occur twice a day until the end of alcoholic fermentation. The Wine is transferred by the pump into barrels for secondary fermentation.
Aged 19 months in French oak, 20% new.
