Nose
The aroma is just magnificent and so true to Sangio—dried fruits, cream frosting, and other pure fruit aromas dominate. There’s a driving note of pure ripe strawberries that reminds me of days spent picking them as a teenager in the Klicker Family’s famous strawberry fields just down the road.
Palate
On the palate, the wine has unbelievable length, glorious acidity, and very fine-grained tannin.
Winemaking
As our vines age (now ı3 years on average) we continue to hone our viticulture, including combing (yes, with a hair comb!) each individual cluster shortly after bloom to help promote looser clusters, creating more intense wines. I continue to believe we are making the finest Sangiovese outside of Tuscany and our continued critical success would bear this out.
Aging
Aged 22 months in mostly neutral French oak and large French oak oval botti.
Appearance
The wine is dark enough to be mistaken for a Merlot or Cabernet.
Food Pairing
Its levity makes it pair with an incredible variety of dishes from red meat to pasta, to heavy fish.
