This syrah has a nose of violet, dried green herbs, and a touch of tar.
100% Walla Walla syrah from Les Collines vineyard. Coming from a cooler site than our Red Mountain vineyard and also having much different soils.
No fining took place and the wine was filtered through a coarse pad to remove the lees.
The wine was made by gently crushing and de-stemming the clusters directly into bins without the use of a must pump. Approximately 33% of the grapes were fermented as whole clusters. Fermentation was completed using commercial yeasts and then the wine was pressed into 3-5 year old French 225L barrels where ML took place.
The wine was aged for approximately 2O months before bottling.
