Palate
With almost 60% of the blend coming from Cabernet Sauvignon vines planted in 1973, the 2013 Symphony is layered with black cherry, plum, currants, coffee, cocoa and hints of allspice, fresh thyme, tobacco and forest floor. The body is laced with smooth fine-grained tannins, great freshness and red fruit characteristics.
Growing Conditions
2013 Symphony is made from 57% Cabernet Sauvignon from Upland Vineyard (Old Block), 14% Cabernet Sauvignon from Blue Mountain Vineyard, 29% Merlot from Les Collines Vineyard (Block 15). The fruit is selected from exceptional vineyards in the Walla Walla Valley and Snipes Mountain appellations.
Harvest
Grapes were hand picked and hand sorted into stainless steel tanks during the late evening hours of September 14th and 16th of 2013. During fermentation, 2 times a day, gentle pump-overs and punch-downs were applied.
Bottling
August 13th 2015.
Winemaking
The wine was aged in 50% new, oak barrels from French cooper Sylvain. Wine barrels were topped every two weeks.
Aging
Aged 22 months in 50% new French Sylvain oak barrels.
