Nose

The 2011 Symphony has a beautiful bouquet revealing violet and red cherries.

Palate

On the mid-palate rich flavors of raspberry, red cherry, black tea, herbaceous notes, belies it's delicate balanced tannins, low acidity and low alcohol. It has both structure and complexity with a luxurious, silky mouth feel.

Growing Conditions

The blend is made from 60% Cabernet Sauvignon from Red Mountain (Corliss Canyons Vineyard), 20% Merlot from Walla Walla Valley (Les Collines Vineyard) and 20% Cabernet Franc from Walla Walla Valley (Summit View Vineyard).

Harvest

Grapes were hand picked and hand sorted into stainless steel tanks during the early morning hours of November 1st 2011.

Bottling

Bottling date September 20th 2013.

Winemaking

During fermentation, 2 times a day, gentle pump-overs and punch-downs were applied.

Aging

The wine was aged in 40% new French, fine grain, oak barrels from cooper Sylvain. Wine barrels were topped every two weeks. Wines were aged separately and blended August 9th 2013. Aged 21 months.
