Palate

The 2011 Cabernet Sauvignon is concentrated in the nose and on the palate with aromas of freshly crushed black cherries and dark plum followed by nutmeg, tobacco and vanilla bean. With an exceptional long finish, the sweet tannins reveal coffee with a hint of caramel cream.

Growing Conditions

This 100% single vineyard Cabernet Sauvignon is from block 13 in Blue Mountain Vineyard.

Harvest

Grapes were hand picked and hand sorted into stainless steel tanks during the late evening hours of November 7th 2011.

Bottling

Bottling date September 20th 2013.

Winemaking

During fermentation, 2 times a day, gentle pump-overs and punch-downs were applied.

Aging

The wine was aged in 50% new French, fine grain, oak barrels from cooper Le Grand. Wine barrels were topped every two weeks.
