Nose

This Cabernet delivers strong nuances of black cherry, stewed fruit, cola and black currant on the distinctive nose. The aromatic, jammy notes are supported well by hints of eucalyptus, mint and pencil shavings.

Palate

On the palate, ripe, red berry fruit slightly overpowers the lively acidity and creates the perfect balance. Between definite layers of dark fruit and toasty oak you will find a firm tannin profile that structures and preserves the beauty of this wine. The fair acidity and sufficient tannins are just a few components that make this a great food wine.

Growing Conditions

Five unique vineyards in Eastern Washington come together in this elegant blend of Cabernet Sauvignon, namely Double River, Double Canyon, Gamache, Wallula and Phinny Hill. Each site brings a clear and noticeable expression to our Cabernet and it showed great potential from the day it was picked until the end of barrel aging.

Bottling

Blended and bottled in the April of 2015.

Winemaking

These different lots en-joyed extended maceration during fermentation and brought forth structure and depth in these wines.

Aging

All of our Cabernet lots were aged predominantly in French oak, with 90% of it being new. New French oak compliments the varietal well and brings out the vibrant fruit-forward notes from each vine-yard site even more. It aged harmoniously for 18 months.

Food Pairing

Dishes such as beef tenderloin, roasted duck breast and barbecued ribs will enhance and intensify the richness of this Cabernet.
