Nose
Ripe cherry, strawberry and clove are some of the beauti-ful notes you will find on the bouquet. Dried grass, black pepper and black currant are present after a few minutes in your glass.
Palate
With a little more time, the round mouthfeel with bright red fruits will slowly change to rich dark fruits with firm acidity and punchy tannin. Toasty oak compliments the ripe fruit on the back palate and ensures for a pleasant finish. This is a refined yet structured representation of Cabernet Sauvignon.
Growing Conditions
The 2011 vintage was significantly cooler than the other great vintages in Washington. However, 2011 produced elegant wines with great balance.
Vineyards: Phinny Hill, Wallula
Harvest
The selected Cabernet blocks were hand-picked at the perfect time.
Winemaking
Extended skin contact and extraction time during fermentation.
Aging
Barrel aging in 50% new French oak for 20 months brought color, structure and complexity to this wine. All of our Cabernet Sauvignon lots remained separate during aging time and only the best were chosen and blended together in the Spring of 2013.
Food Pairing
This food driven Cabernet will pair well with smoked beef ribs, meatballs with pomegranate currant sauce, Gruyere cheese tarts or just a roast beef sandwich.
