Palate

This dark, brick red wine begins with generous herbs, tobacco, and earth. It continues on with a slight roasted quality like coffee or cocoa powder, dried violets, and subtle black fruits. It is elegant and opens up beautifully with more time in your glass. Dry tannins create a nice grip and subtle fruit and savory aromas show varietal typicity.

Harvest

Hand-harvested and sorted. 48-hour cold soak. Fermented with Woodward Canyon native yeast in 2-ton stainless steel fermenters.

Aging

25% new French Barrels, 23 months.

Food Pairing

This wine is balanced enough to enjoy now but will reward those who are patient. With proper cellaring, this wine should age well for ten years or more. Pair with chicken pot pie or roasted meats.
