Beautifully vibrant flavors of fresh star fruit and ripe Bartlett pear marry perfectly with subtle mineral notes.
Palate
Delineated fruit flavors. Oak that is perfectly understated and in a wonderful proportion with the alcohol and crisp acidity. The mouthfeel has a nice weight and texture.
Growing Conditions
2019 was a warm/dry vintage. The north block CH yielded a high yield of 5.8 tons/acre. Certified Salmon Safe.

Winemaking
Whole cluster pressed & juice cold settled overnight. Clarified juice went to 60 gal Sirugue tight grain French oak barrels. Inoculated with Prise de Mousse yeast and fermented slowly. Partial spontaneous malolactic fermentation. No racking or lees stirring.
Aging
6 months in 100% tight grain Sirugue French oak, no new oak.
