Nose
This wine is dark red in color with enticing aromas of Christmas fruit cake, and notes of graham.
Palate
An elegant but firm mouth feel begins with plum, herbs, and a slight olive character that finishes with baking spice and graphite/pencil. The smooth tannins and oak integrate beautifully with generous fruit.
Growing Conditions
2018 was a warm and dry vintage where we saw beautiful ripening with lovely physiological maturity. Woodward Canyon Estate Vineyard is Certified Salmon Safe.
Harvest
All grapes were harvested by hand and sorted prior to crushing. 2018 was a warm and dry vintage where we saw beautiful ripening with lovely physiological maturity. Clone 4, clone 6, and clone 8 Cabernet Sauvignon, and clone 400 of Petit Verdot were thinned to ensure even ripening. The crop yields ranged from 1.5 tons to 2.4 tons per acre.

Winemaking
This wine was fermented in 2000 liter stainless steel tanks and gently punched down twice a day.
Aging
After pressing and settling, this wine went directly to French chateau barrels for additional aging and maturation.
Food Pairing
Pair with mac and cheese with Brussels sprouts or a cheese course with Beechers and Humbolt Fog.
