Palate

Aromas of cherry wood smoke, cranberry and rhubarb molasses lead into a floral note on the palate with flavors of raspberry vinaigrette, balsamic reduction, dark chocolate and dried blueberries. This wine has a long, focused finish with brawny tannins.

Winemaking

Destemmed gently and dropped into 1.5 ton stainless steel bins, cold soaked 72 hours, inoculated with a variety of yeasts, hand punched 3 times daily and pressed directly to barrel where the wine finished both primary and secondary fermentation.
