Growing Conditions
The weather was quite the opposite in 2000 than 1999, with a very warm summer and quite a cool harvest season. The result, however, was similar to 1999, with long “hang time”, deep color, balanced acidity and tannin, and intense, concentrated fruit flavors.
Those who were patient at harvest time (and we were) were rewarded with exceptional fruit.
Winemaking
Our 2000 Cabernet Sauvignon possesses inky color that is saturated to the rim. The nose is of ripe black fruits, cassis, and balsam fir. The wine's abundant tannins hide themselves in the wine's excellent balance and long finish.
Aging
Aged in new French, American, and Oregon oak barrels for 22 months.
