Palate
The extended aging provides aromas of complex minerals, grapefruit and brioche with flavors of bright citrus, toasted almonds and yeast. The mousse is light, but persistent, complementing bone-dry acidity and minerality.
Harvest
This zero dosage sparkling Blanc de Blancs was harvested early to maintain the appropriate balance of acidity and ripeness.

Disgorged August 2, 2017.
Winemaking
Proost is produced from Chardonnay grapes in the Méthode Champenoise style.
Aging
Bottle aged en tirage for 24 months.

Shows pale straw in color.
