Nose

The nose opens
with sweet fruits, cinnamon and brown sugar.

Palate

Exotic flavors of blended fruits fill the
palate and follow through the long finish. The naturally firm acids are clean and connect
with smooth tannins. While it is quite approachable now, we know this wine will have a
long life in your cellar of twenty years or more. Nonetheless, Champoux Vineyard wines
develop their perfume fully by the seventh year of age and remain youthful until twelve
years old.

Harvest

Harvested by hand on October 3rd, the Champoux Vineyard cabernet sauvignon was
physiologically ripe at 25.2°brix. The syrah was harvested on September 25th at
26.1°brix.

Bottling

We
blended, filtered, and bottled in the second year on August 20th, 2005.

Winemaking

The cabernet was fermented on skins for seventeen days, and the syrah for
nine days.

Aging

We chose one American cooper for the wine and aged it in 45% new barrels
from November 2003 to bottling. The remain ing barrels are mature French oak
