100% Grenache, a late-ripening varietal that excels in the warm, dry conditions of the Walla Walla Valley. The varietal is highly prone to oxidation and because of this is only racked at bottling.
A blend of equal parts Grenache, Syrah, and Mourvedre, our 2015 GSM was fermented separately and aged for 12 months before blending. It was aged for an additional 14 months after blending in French Oak barrels.
This Cab is sourced entirely from our Eidolon estate and is a blend of our favorite barrels of the vintage. It was aged in 100% new French oak barrels for a total of 30 months. It is very limited-production reserve.
Our classically styled Cabernet Sauvignon is 100% single varietal from our Estate Eidolon Vineyard, in the ‘Rocks District of Milton-Freewater’ sub appellation of the Walla Walla Valley.
