Nose
Dark in color with aromas of savory meat on the nose, followed by purple and blue fruits including huckleberry and blueberry.
Palate
The palate brings a balance between the fruit and pepper notes, very rich flavors of cola, baking spices and meat, and brisk dry tannins with a long, savory finish.
Winemaking
Crushed gently and dropped into 1.5 ton bins, cold soaked 48 to 72 hours, then inoculated with a variety of yeasts, hand punched and pressed directly to barrel where the wine finished both primary and secondary fermentations.
