Winemaking

The grapes were whole cluster pressed to a stainless-steel tank where the juice was cold settled. After two days of settling the juice was distributed into 40% new French Oak and the remainder 60% fermented in stainless steel drums. Fermentation was done at cool temperatures and lasted close to 50 days.
