Nose
Notes of ash, crushed seashells, and ripe Asian plum immediately jump from the glass.
Palate
The palate offers a very soft tannic structure, white pepper, fresh cranberries, rosehips, sumac, and hibiscus tea. If you could taste the color red, it would taste like this Malbec.
Aging
After harvest, the fruit was crushed and destemmed and placed in a stainless fermenter where it underwent a natural fermentation without any additional yeast or yeast nutrients. During initial fermentation, gentle daily punch-downs were employed in order to minimize oxygen exposure, but still allow for mild tannin extraction. The wine was pressed off at 5 brix and finished fermentation in a concrete egg. Following 5 months in concrete, the wine was racked to a new French oak puncheon to undergo malolactic fermentation. In February 2021-- two months prior to bottling-- the wine was racked for clarity into another oak puncheon for a total of 14 months of aging in oak, and aged for 9 months in bottle before release.
