Palate
Dark and rich with a silky palate and flavors of fresh raspberries
and salted dark chocolate.
Growing Conditions
2016 vintage experienced the best of both worlds with a
hot spring and early summer. A cooler than normal end of
the ripening season allowed the wines to have ripeness, yet
maintain freshness and elegance. The early dry and warm spring, combined with cooler
temperatures in August and September, slowed down ripening
and resulted in the longest harvest on record in Washington
State (August 15-November 15). Overall, 2016 saw very favorable growing conditions, producing
wines with nicely resolved tannins and maturity.
Harvest
Fruit was harvested from vineyards located predominantly in
the Horse Heaven Hills and the Wahluke Slope.
Winemaking
Grapes were fermented separately in stainless steel tanks.
After seven days the grapes were pressed and fermentation
finished in tanks.
Aging
Aging occurred for 7 months in 60% new oak and 40% older
barrels, both French and American.
Food Pairing
This Cabernet Franc-based red wine
is a great option to pair with grilled meats and vegetables.
