Palate
Focused and fresh, this exceptionally concentrated Cabernet Sauvignon showcases elegant tannin structure and a silky mouthfeel. Expressions of deep blackberries, blackcurrants and dried herbs are tightly wound on the mid-palate. Yet it’s finesse and refinement are apparent on the long finish.
Growing Conditions
Our 2014 Cabernet Sauvignon is made from 100% Cabernet Sauvignon from Upland Vineyard (Old Block) in the Snipes Mountain AVA.
Harvest
Grapes were hand picked and hand sorted into stainless steel tanks during the late evening hours of October 10th 2014.
Bottling
August 30th 2016.
Winemaking
During fermentation, 2 times a day, gentle pump-overs and punch-downs were applied.
Aging
The wine was aged in 50% new, oak barrels from French cooper Sylvain for 18 months. Wine barrels were topped every two weeks.
