Nose
This wine has a lighter body with cranberry, white pepper, and smoke on the nose.
Palate
The palate is red fruit with faint pepper, wet gravel, and a nice acidity.
Bottling
No fining took place and the wine was filtered through a coarse pad to remove the lees.
Winemaking
The wine was made by gently crushing and de-stemming the clusters directly into bins without the use of a must pump. Fermentation was completed using commercial yeasts and then the wine was pressed into 4-5 year old French 225L barrels and tanks where ML took place.
Aging
The wine was aged for approximately 2O months before bottling.
Food Pairing
An ideal wine to be paired with lighter meats such as roast chicken or sockeye salmon.
